Kolam / Rangoli

As we are living in Delhi, drawing kolam in infront of the home daily is impressed by many of my neighbours.
Daily cleaning the front of home at morning & putting kolam will be good to family. Elders use to say, "If u do like this daily, then your family will be blessed with Lakshmi devi & the bad things will get out of your family"

 During the time of holi, i got few colours. so, finally after 1 1/2 years of my marriage, I made this Rangoli

Mutton cutlet

when we went to simla, we had this mutton cutlet from Indian coffee shop. It's a oldest shop in simla with best taste & oldest rate.( A plate of  mutton cutlet for 38 Rs. :-) ). That taste make to try this recipe... finally which came out good... hope this will be treat for mutton lovers who like to taste non-veg as starter like me...


Ingredients :
Mutton - 250 gm
Potato - 1 (small)
Egg - 1
Onion - 1
Tomato - 1
Turmeric powder - 1/4 tsp
Chilli powder - 1 tsp
Coriander powder - 2 tsp
Ginger & Garlic paste - 1 tsp
Sugar - 1/2 tsp
Maida (all purpose flour) - 1/2 cup
Salt - to taste
Bread crums - 50 gm
Black pepper - 1 tsp
Garam masala powder - 1/4 tsp
Lemon juice - 2 tsp
oil - 4 tsp
Curd - 1tsp
Funnel Seeds (Sombu) - a pinch
Cumin Seeds (Jeeragam) - a pinch
Curry leaves - Some to saute
Coriander leaves ( fresh or dried )
 
Things to done before preparation :

a) Take a slice of bread & grind it like powder without water

 b) Boil the mutton in pressure pan along with  a pinch of turmeric powder, salt ,1/4 tsp of ginger & garlic paste, 1 tsp of curd and 1/4 tsp of pepper powder. Instead of marinating, we can do like this. So that the mutton will absorb the taste

c) Chop onion & tomato. Prepare ginger & garlic paste

Preparation :

 First let we prepare the mix. Pour oil in pan. Saute funnel seeds,cumin seeds and curry leaves, add chopped onion. After it became golden brown , add ginger & garlic paste. Once the fragrance of ginger & garlic came out, add pinch of turmeric powder, chilli & coriander powder. Add a tsp of sugar & some amount of salt. Remember that already you have added salt to raw mutton. Finally add coriander leaves.



After the mix is ready till this stage remove from stove. cool it for sometime. Then add maida, black pepper, garam masala. The mix is ready now.

Now a days most of us are avoiding oil to maintain good health. So, instead of deep fry , I'm going for shallow fry. Now make the prepared mix in any shape ( round, heart, square, rectangle) which you desire. Roll on this over bread crums and put it in pan.       

Once the cutlet is ready, add lime juice to the top of it. Now with tomato ketchup.As i showed you in the last post.

Chettinad Mutton Liver Soup

During the summer time, from a health conscious perspective, Mutton is most preferred than chicken since chicken is said to produce extra heat to the body. So, I wish to share this mutton starter recipe. Mutton liver is rich in iron, protein & vitamin A. Because of these reasons, this recipe is advisable at the time of body pain, fever & tiredness.


Ingredients : 

Mutton liver, kidney & 'flower' mix - 150 gm
Small onion - 8-10 (or) Big onion chopped - 1/4 cup
Tomato - 1/2
Curry leaves - Some to saute
Pepper - 1 tsp or less
Funnel seeds (Sombu/Saunf) - 1 tsp
Cumin seeds (Jeeragam/jeera) -1 tsp
Coriander seeds (Malli/Daniya) - 1/2 tsp
Cinnamon (Pattai/Darchini) -Some to saute
Bay leaf (Elai/Tej patta) - Some to saute
Turmeric powder -1/4 tsp
Salt - to taste
Oil - 2 -3 tsp
Water - 400 ml


Things to be done before preparation:

a) Wash the mutton pieces 3 -4 times in warm water. Cut it & keep aside



b) Chop onion & tomato. Saute coriander seeds, funnel seeds & cumin seeds of 1/2 tsp each in the empty pan and powder it. 

Preparation:

Now let us start this strong aroma mutton liver soup. First add oil to the pan, then saute cinnamon, bay leaf, funnel seeds,cumin seeds,pepper seeds and curry leaves. To this add chopped onion. After it turns transparent, add the chopped mutton pieces (In the picture, liver and kidney are reddish brown and the white ones are 'flowers'). Fry it for 2 min. after adding turmeric powder,grounded powder and salt. If you over cook the liver, it will become hard. Transfer these contents to a pressure pan (alternatively, you could do all this directly in the pressure pan). Pour water & after whistle leave for 5 minutes.

Soup is now ready... decorate with chopped fresh coriander leaves. (Add pepper,salt & lime juice to taste). You can also impress others with your mutton liver soup served with mutton cutlet and tomato ketchup.
